How does an airline compensate for varying passenger weights?

Obviously, an airline/captain cannot know for sure how much each passenger is going to weigh. So what do they do to make sure they don’t overload the airplane?
Is that a reason why they will leave seats empty sometimes?
I have been wondering how they do that for awhile.
