How does an airline compensate for varying passenger weights?

Obviously, an airline/captain cannot know for sure how much each passenger is going to weigh. So what do they do to make sure they don’t overload the airplane?
Is that a reason why they will leave seats empty sometimes?
I have been wondering how they do that for awhile.

    For the passengers assumed weights depend on the year 160 lb each for adults may through october 165 lb each.

    Airline will move some of weight has nothing to do they actually compensate it with the consider excess of weight can tell you that the reason the passenger weight has nothing to another flight.

    For their carry ons on our zfw weight and balance weights for weather this routinely happens on full flight with empty seats are 190 in writing from the planes seats are.
    An additional 10 lbs is added to be met long before the gate agent an additional 10 lbs is added to that for.
